The method provided by the invention adopts an improved toggling drying process to replace the traditional drying step, and setting the water content of the donkey hide subjected to toggling drying treatment in a most appropriate range, within a certain range of temperature, drying the hide and simultaneously fixing the hide during toggling drying to avoid natural shrinkage of the hide, thus facilitating fast drying of the donkey hide. The hide can be smoother, the whole drying process does not exceed 24h, and the drying efficiency is improved. In addition, the method provided by the invention is also added with cooling washing and mechanical fleshing, blood stain, silt and grease on the hide are effectively removed, and breeding of bacteria is reduced, thus being conducive to long-term preservation of the donkey hide.
