One method for the production and extraction of dihydrolipoic acid (DHLA) involves the bioconversion of R-lipoic acid to dihydrolipoic acid. The method ferments lipoic acid with bacteria selected from any of the following bacterial genera: Lactobacillus, Enterococcus, Pediococcus or Bacillus. More specifically, the present invention relates to methods for extracting DHLA using non-traditional solvent systems (ie, food oils). Typically, DHLA produced in the methods of the invention is isolated from cells that have been inactivated or killed.
