The method comprises the steps of acquiring a first gray scale parameter, a second gray scale parameter and a target gray scale parameter; acquiring a first temperature parameter and a second temperature parameter; utilizing the first gray scale parameter, the second gray scale parameter, the first temperature parameter and the second temperature parameter to obtain responsivity of an infrared sensor; obtaining a relative temperature difference value through the responsivity, the first gray scale parameter and the target grayscale parameter; and obtaining a to-be-measured target temperature value through the relative temperature difference value and the first temperature parameter. The method is advantaged in that by obtaining the temperature values of the two constant-temperature reference assemblies and an output gray value of the infrared rays, a problem that long-time waiting needs to be carried out after startuptill the system temperature is stable and heat balance with the external environment is achieved is avoided, and rapid and accurate infrared temperature measurement at different environment temperatures is achieved.
