The invention discloses a fluidized bed roaster product quality soft measurement method and device; the method comprises the steps: obtaining a plurality of groups of production data of a fluidized bed roaster, the production data being a plurality of parameters of the fluidized bed roaster during production; establishing a mechanism model of the fluidized bed roaster; substituting the plurality of groups of production data into the mechanism model, obtaining an optimal value of an unknown model parameter through iterative optimization, and substituting the optimal value of the unknown model parameter into the mechanism model; obtaining a quality score prediction sequence corresponding to each group of production data according to the mechanism model; and constructing a neural network model according to the multiple groups of training data, wherein the neural network model is used for outputting a predicted quality score according to the production data.
