Abstract

The invention provides a method for preparing germinated brown rice by utilizing a repeated mild drought stress method. The method is characterized by placing the brown rice into drought stress solution to compel the soluble sugar, free amino acids and active oxygen to be accumulated, activating protective enzymes and phenylalanine ammonia lyase and promoting the amount and activities of superoxide dismutase, hydrogen peroxidase and peroxidase to be increased and polyphenol compounds to be enriched. The method has the following advantages: the method of alternately carrying out repeated and short drought stress and high temperature germination hastening is adopted to prevent excessive active oxygen from harming the cells, thus ensuring the active oxygen to be slowly generated and not only obtaining higher contents of soluble sugars, free amino acids, superoxide dismutase, hydrogen peroxidase, peroxidase and polyphenol compounds but also improving the germination percentage of the brown rice.
