According to the control method and the kitchen appliance, under the condition that the current air volume is greater than the target air volume, the air volume of the fan can be gradually reduced by setting at least one transition air volume, so that the situation that the smoke sucking effect of the kitchen appliance is influenced by sudden decrease of the air volume is avoided; and meanwhile, the sudden change in the airvolume of the fan caused by fluctuation of environment parameters can be avoided so that the user experience can be improved.
