Abstract

The invention provides a method for identifying mature and concentrated rape honey, acacia honey and vitex negundo honey by using pyruvic acid, and belongs to the technical field of food detection. The method comprises the steps of respectively dissolving a proper amount of pyruvic acid and various mature and thermally concentrated honey in a phosphate buffer solution, adjusting the pH value to 3.0+/-0.1, and obtaining hydrogen spectrum data of pyruvic acid and various honey by adopting a 400MHz nuclear magnetic resonance spectrometer with a BBI probe. The hydrogen spectrum data of pyruvic acid shows that the characteristic peak of pyruvic acid is a single peak near the displacement of 2.37+/-0.02ppm, for example, the hydrogen spectrums of honey samples of rape honey, acacia honey and vitex negundo honey have a single peak at the same position and are higher than the peripheral peaks, wherein if the hydrogen spectrum is higher than the peripheral peaks, the honey is concentrated honey,otherwise, the honey is mature honey. The method provided by the invention is simple and efficient, and can be used for accurately identifying mature and thermally concentrated rape honey, acacia honey and vitex negundo honey.
