The method comprises the steps of respectively dissolving a proper amount of pyruvic acid and various mature and thermally concentrated honey in a phosphate buffer solution, adjusting the pH value to 3.0+/-0.1, and obtaining hydrogen spectrum data of pyruvic acid and various honey by adopting a 400MHz nuclear magnetic resonance spectrometer with a BBI probe.
