[0004] A kind of red date candied haws, the production process of which is as follows: stringing fruits, selecting fresh, crisp and just ripe red dates with large meat, thin skin, small core and even size, washing and removing the core; stringing the cored red dates with bamboo sticks , fifteen per string. To boil sugar, pour rock sugar into a copper pot, add water according to the ratio of sugar to water 2:0.5, and boil for about 15 minutes over high heat. When the sugar is boiled just right, it becomes viscous and transparent. Dip in sugar, gently turn the skewered red dates against the bubbles that rise from the boiled hot sugar, and wrap it in a thin layer. After cooling, place the jujube skewers dipped in sugar on a smooth board to cool for two to three minutes before serving.
