Problems solved by technology

Starch, the main component of highland barley, accounts for about 75%-80% of the whole endosperm, but it is easily digested and degraded by amylase, so it will affect the function of highland barley powder to regulate blood sugar, which has a negative impact on the development of starchy functional nutritional foods. huge obstacle

Embodiment 1

[0021] Select highland barley starch and soybean oil as raw materials, according to the ratio of highland barley starch: water: oil of 1:0.5:0.2, first add water to the highland barley starch for preliminary mixing, then add oil and stir well with a mixer. Then the starch-oil composite system after stirring is added into the material cylinder of the 3D printer. After setting the transmission temperature and keeping it for 30 minutes, 3D printing was performed at the printing temperature.

[0022] The in vitro digestibility of the highland barley starch and oil compound obtained by 3D printing was tested, and the contents of fast-digesting components, slow-digesting components and anti-digesting components are shown in Table 1.

Abstract

The invention discloses a method for regulating the digestion performance of highland barley starch on the basis of a 3D printing technology. The method comprises the following steps: (1) mixing highland barley starch and water, adding edible oil, and performing complete and uniform stirring to form a starch-oil composite system, in which the mass ratio of the highland starch, the water and the oil is 1:(0.5-2):(0.2-1); (2) adding the uniformly stirred starch-oil composite system into a material barrel of a 3D printer, setting the transmission temperature to be 50 to 100 DEG C, keeping the transmission for 10 to 30min, and performing 3D printing under the condition that the printing temperature is 150 to 210 DEG C to obtain highland barley starch food in a 3D shape. According to the method, the slow digestion and anti-digestion performance of the highland barley starch can be intelligently improved by combining a 3D additive manufacturing technology and a thermal treatment manner, the nutritional value of the highland barley starch food can be improved, and the requirement of a special group can be met.

Description

technical field [0001] The invention belongs to the field of starch modification and nutrition control, and specifically relates to a method for adjusting the slow digestion and anti-digestion properties of highland barley starch based on 3D printing technology. Background technique [0002] Starch is the main source of energy for humans, and its digestibility has a great impact on human health, and is closely related to metabolic diseases such as diabetes, hyperlipidemia, and obesity. Starch can be divided into fast digestible starch, slow digestible starch and resistant starch according to different digestibility. Slowly digestible starch has a slow digestion rate in the human body, and can slowly release glucose in the human body, which is beneficial to the stability of human blood sugar. Resistant starch is a new type of functional substance that has been widely studied in recent years. Although it cannot be digested and absorbed by the small intestine to provide energy...
