An embodiment of the invention provides a PET (positron emission computed tomography) imaging method and a PET imaging system. The method includes: enabling an examination bed to move along a scanning cavity of PET scanning equipment to acquire a plurality of PET subdata sets of corresponding organ parts, scanned at multiple bed positions, of a subject and acquire motion signals in scanning of the corresponding organ parts at each bed position; acquiring gating phases according to the motion signals; subjecting the PET subdata sets to gating reconstruction according to the gating phases to acquire PET images, in one or more gating phases, of the corresponding organ parts scanned at each bed position; subjecting the PET images corresponding to the gating phases identical in sequence to image stitching; determining gating number on the basis of respiratory movement amplitude. Therefore, pertinent gating reconstruction of different organ parts can be realized, and PET imaging quality is effectively improved as image stitching is carried out on the basis of respiratory movement amplitude.
