The rapid detection method is characterized by comprising the following steps: (1) collecting extracted liquid samples in the various stages in the taurine extracting process, wherein each sample is divided into two parts, the near infrared spectrum of one sample is measured, and the taurine content of the other sample is measured by an amino acid analyzer; (2) detecting the near infrared spectrums of the samples; (3) measuring the taurine contents of the samples; (4) establishing a regression prediction model; and (5) predicting the taurine contents of the samples by using the regression prediction model. According to the rapid detection method, the near infrared spectrum of the extracted liquid is measured, the taruine content of the extracted liquid can be rapidly obtained by utilizing an established calibration model; compared with the conventional amino acid analysis method, the rapid detection method has the advantages that the analysis time is greatly shortened, the amount of the reagent is saved, and the precision of the predication result is high.
