The natural water soluble extract enriched edible oil contains the following raw materials: edible oil, a natural water soluble extract, a gemini surfactant and a solvent. The method is as follows: firstly, the gemini surfactant is added into the solvent to be dissolved, then the natural water soluble extract is added, the materials are stirred at room temperature to be dissolved, the dissolved materials are added into the edible oil, the materials are stirred at room temperature to be clarified, and the finished products are obtained. The content of the natural water soluble extract in the edible oil can reach 0.8%, the natural water soluble extract can be fully dissolved and evenly dispersed in the edible oil. The natural water soluble extract enriched edible oil is free of stratification after long-time placing and excellent in mouthfeel and flavor, also has special pharmacological and health-care functions of the natural water soluble extract, and is less in addition amount of the gemini surfactant, and good in effects and green and safe. The method is simple in technology, beneficial for dissolving and dispersing of the natural water soluble extract, suitable for additions of a variety of the natural water soluble functional components in the oil, and broad in market prospects.
