The deerskin glue and the production process thereof, whichare provided by the invention, have the advantages that the flavor ingredients are added at a specific temperature and time to enhance the mouthfeel of the deerskin glue; the processes of dehairing and impurity removing are increased before processing and the sterilization process is increased to improve the product purity; the trypsin is added and hydrolysis is carried out to ensure that the product is more transparent and the protein molecules are more uniform; and the concentration temperature is reduced and the glue is prevented from overcooking to ensure that the production quality is increased and the product quality is finally improved.
