Abstract

The method for removing hair during Huai pig slaughtering uses a water-scalding method to remove hair. In summer, the temperature of scalding water is controlled within 56-58 DEG C, and the scalding time is 4-6 minutes. In winter, the temperature of scalding water is controlled within 58-61 DEG C, and the scalding time is 12-15 minutes. The scalding time and the water temperature in spring and autumn are between those of the winter and the spring. The method comprises the following steps: after mechanical hair removal, watering the heated food grade of resin glucoside grease (adding a certain scale of leaf fat) onto the body surface of a pig to remove hair again (heating with a resin heating pot), immediately flushing with cold water to cool after watering, and then manually stripping off the resin glucoside grease and put the resin glucoside grease on the resin heating pot to be repeatedly heated for use.
