The method comprises the following steps: firstly, carrying out sample treatment on three varieties including sugar oranges, early-ripe Nanfeng tangerines 97-1 and small-fruit Nanfeng tangerines 97-2, then determining different capsule dressing texture indexes by adopting a texture analyzer, and finally counting and analyzing data. According to the invention, the melting property of citrus is researched by adopting the texture analyzer instead of sensory evaluation, the determination result is objective and accurate; the operation is rapid; a plurality of evaluation indexes can be obtained by once determination.
