The embodiment of the invention discloses an image stitching method and an image stitching system. The method comprises the following steps: acquiring a plurality of images corresponding to a plurality of scene points through a plurality of sets of image acquisition equipment respectively, wherein the images corresponding to each scene point comprise a reference image and an image to be stitched, and the reference image and the image to be stitched have an overlapped region; carrying out first remapping on the reference image and the image to be stitched respectively; extracting a rough matching characteristic point pair between the remapped reference image and the remapped image to be stitched; acquiring a fine matching characteristic point pair from the rough matching characteristic point pair by utilizing second remapping; estimating a rotary matrix and a deviation matrix between the plurality of sets of image acquisition equipment by utilizing the fine matching characteristic point pair; and stitching the images corresponding to the scene points respectively according to the rotary matrix and the deviation matrix, so as to obtain a stitched image.
