Abstract

The invention relates to a method for synchronously extracting corn germ oil and separation protein by using an alcohol-assisted enzyme method, and belongs to the technical field of cereal and oil bio-processing. The method comprises the following steps: (1) adopting an extrusion-expansion machine to carry out an extrusion-expansion pretreatment on corn germ to obtain an extrusion-expansion product; (2) carrying out enzymolysis on the extruded-expanded corn germ powder with a neutral protease, adjusting the pH value to 8.9 after completing the enzymolysis, carrying out centrifugation separation, and removing residues to obtain a mixing liquid of free oil, an emulsion and a hydrolysate; (3) adding an acid to the residue-removed mixing liquid, adjusting the pH value to 4.8, and carrying out centrifugation, wherein the resulting precipitate is high purity separation protein; and (4) carrying out an ultrasonic treatment on the separation protein-removed mixture, then adding ethanol, carrying out centrifugation, and carrying out eduction collection on oil to obtain the corn germ oil.
