The method comprises the following steps: uniformly mixing the fruity essence with the maltodextrin, the starch sodium octenyl succinate and deionized water; performing homogeneous emulsification and spray drying to form the granular fruity essence, so that the aroma retaining effect and the oil solubility of the essence are improved; the fruity essence is applicable to flavoring of the oil-based ink.
