The tea frying equipment comprises a machine frame, an infrared distance measuring device, a motor, a first coupling, a torque sensor, a second coupling, a transmission shaft, a frying pan, an electric heating wire, a frying plate, a speed sensor and a temperature sensor. According to the control method of tea frying equipment disclosed by the invention, the tea leaf stir-frying height is set as three set values namely H1, H2 and H3 and corresponding moment values of the torque sensor are set as M1, M2 and M3, so that the judgment of each stage of tea frying is realized. According to the control method disclosed by the invention, control on the motor of the tea frying machine is depended on specific numerical value obtained by the torque sensor, the problem that workers perform operation according to feelings, so that the stir-frying quality of the tea leaves is unstable is solved,the quality of processed tea leaves is improved, and the control method has profound and lasting significance of improving the processing quality of tea; and through data read by infrared probes in different heights, the height of the tea leaves during each stir-frying can be accurately acquired and controlled, and the accurate degree of controlling the rotating speed of the motor is increased.
