Abstract

Watermelon frost has the effective component of watermelon in 0.01-3 wt% and menthol. It is prepared through the processes of: squeezing watermelon to obtain juice; extracting with peppermint oil; cooling the extracted peppermint oil to separate frost; and filtering to obtain watermelon frost. The watermelon frost contains the effective component of watermelon and menthol and no Glauber salt, so that it has the original taste of watermelon maintained and no side effect on human body. The preparation process produces on effluent with inorganic salt to pollute environment. The peppermint oil is recovered in the process.
