Embodiment 1

[0052]Purified vegetable protein isolates are formed according to the methods of the present invention. 243 lbs of soy protein isolate was added to 2959 lbs of water to form a soy protein isolate slurry containing 7.6% solids. The pH of the slurry was adjusted to 4.5 with hydrochloric acid, and the temperature of the slurry was raised to 50°C. An enzyme preparation comprising acid phosphatase and phytase with an activity of 1000 KPU / kg clot solids was added to the slurry. The slurry was treated with an enzyme preparation for 2 hours, and then the pH of the slurry was adjusted to 5.1 with an alkaline mixture of potassium hydroxide and sodium hydroxide. The slurry was then diluted with water to a concentration of 4.2% solids and washed in a bowl centrifuge. 275 lbs of the washed concentrate filter cake which had been adjusted to a 14% solids slurry was neutralized with an alkaline mixture of potassium hydroxide and sodium hydroxide. The contents were then supplemented by addi...

Abstract

The present invention is directed to a nutritional formula for feeding human infants comprising isolated soy protein wherein the isolated soy protein has (a) a degree of hydrolysis of from about 0.5% up to about 30%; (b) a combination of an inositol-6-phosphate content, an inositol-5-phosphate content, an inositol-4-phosphate content and an inositol-3-phosphate content of less than about 8.0 mumol / g soy protein on a moisture free basis; and (c) a nitrite content of less than about 10 parts per million. Optionally, the isolated soy protein for the nutritional formula has a free amino acid content of up to about 25%. Further, the isolated soy protein for the nutritional formula optionally has a calcium content of from about 1.0% up to about 12%.

Description

field of invention [0001] The present invention relates to infant formulas comprising isolated soy protein and methods of feeding infants with such formulas. The soy protein used is partially hydrolyzed and has a low phytic acid content of inositol-6-phosphate, inositol-5-phosphate, inositol-4-phosphate and inositol-3-phosphate, with very low Nitrite content, and has free amino acid content. Background of the invention [0002] Many food and beverage products include protein supplements derived from plant materials such as soybeans, beans, peas, other legumes and oilseeds such as rapeseed. Vegetable protein materials, especially soy, are used to enhance the nutrition of infant formula. The role of plant protein supplements in infant formula is to increase the nutritional value of formula and provide a protein content similar to that of human milk. [0003] However, commercially available protein concentrates and isolates contain some impurities that are not desired in inf...
