The apparatus of Figure 1 typically manufactures, stores and dispenses soft frozen confectionary products such as soft ice cream, yoghurt or other similar food products. In addition, the unit includes a clean-in-place system (CIP) that may allow cleaning of the machine without dismantling it (described in detail below). Abstract

Soft frozen foods, such as ice cream and frozen yogurt, are pumped from a sterile reservoir into a closed loop flow path that includes an emulsifying bucket assembly that intimately mixes the ingredients in the food composition into a frozen food product of uniform consistency. The dispensing head allows extraction of a supply of soft food from a closed circuit. The Clean-in-Place system allows cleaning and sanitizing critical parts of the machine that come into contact with food without having to dismantle the machine.
