Abstract

The invention relates to a technique for removing fishy smells and peculiar smells of aquatic products by ozone water. The technique comprises the concrete steps of (1) preparing ozone by using an LX-101 ozone generator; (2) supplying water by using YBG full-automatic variable-frequency speed-control purifying water supply equipment and mixing the supplied water with ozone; (3) soaking and unfreezing to-be-processed aquatic products in ozone mixed water for 1-2 hours; (4) manually removing fish skins and fish bones of the unfrozen aquatic products; (5) rinsing the aquatic products obtained inthe step (4) with the flowing ozone mixed water; (6) soaking the aquatic products obtained in the step (5) in the ozone mixed water; (7) washing the aquatic products obtained in the step (6) with theflowing ozone mixed water; and (8) performing quick freezing, packaging and cold storage on prepared fish finished products. The technique for removing the fishy smells and peculiar smells of the aquatic products by the ozone water meets the standards of sterile foods, and meanwhile, removes the fishy smells and peculiar smells of the aquatic products and improves mouth feeling.
