The method for preparing saponins compounds by fermenting and culturing gen-seng fruits is characterized by comprising the following steps: firstly, inoculating wine yeast in a liquid substrate to culture and induce the yeast to form a mother culture with a yeast number of larger than or equal to 10<7> per milliliter; secondly, inoculating the mother culture into the liquid substrate to ferment and culture; carrying out the seed culture and the ferment culture in darkness, at the temperature of between 26 DEG C and 29 DEG C for at least 6 days. Each liter of substrate comprises 600-800ml of gen-seng fruit liquid, 60-80g of glucose and 1-3g of ammonium sulphate in the liquid substrate, and a pH value is from 3 to 4.
