Abstract

The invention discloses a black fungus and hericium erinaceus jelly and a preparation method thereof, relating to a jelly and a preparation method thereof. The invention aims at solving the technical problems of single preparation method and few product types of the existing black fungus and hericium erinaceus products. The jelly is prepared from 1-1.5 parts of black fungus, 1-2 parts of hericium erinaceus, 60-70 parts of distilled water, 0.4-0.5 part of konjac glucomannan, 0.3-0.5 part of carrageenan, 0.1-0.2 part of propylene glycol alginate, 10-12 parts of sucrose, 0.2-0.4 part of sodium citrate, 0.15-0.2 part of calcium chloride, 0.001-0.002 part of strawberry essence and 0.2-0.3 part of citric acid. The method comprises the following steps of: (I) preparing the ground particles of black fungus; (II) preparing black fungus juice and expansion particles; (III) preparing the ground particles of hericium erinaceus; (IV) preparing hericium erinaceus juice; (V) preparing glycine liquid; and (VI) preparing the black fungus and hericium erinaceus jelly.
