Abstract

A coffee machine (1) comprises: a filter holder (2) intended to contain at least one coffee dose (3), a dispensing unit (4) with dispensing nozzles (40) intended to send a flow of hot water on the coffee dose (3), a water supply system (5) provided with a pump (50) to supply pressurized water towards the dispensing nozzles (40), a heater (6) to heat the water to be supplied to the dispensing nozzles (40), a dispensing valve (7) to enable / disable the supply of hot water towards the dispensing nozzles, and a pre-infusion valve (9) disposed upstream the dispensing valve (7); the pre-infusion valve (9) being set in such a way as to operate in a pulsed mode for a pre-infusion time of at least 4 seconds, with opening and closing time equal to or lower than 1 second.
