Abstract

The invention discloses a method for determining non-edible substance trithiocyanuric acid trisodium salt (TMT) in wheat flour and additives thereof by ultra-high performance liquid chromatography-tandem mass spectrometry. The method comprises the steps of extracting total trithiocyanuric acid trisodium salt in the sample by using an acetonitrile-formic acid/ammonium formate buffer solution system; purifying the supernatant by an Oasis PRIME HLB pass-type solid-phase extraction column, conducting C18 chromatographic column separation, performing gradient elution by adopting a methanol-acidified ammonium formate mobile phase, carrying out detection in a triple quadrupole mass spectrum electrospray multi-reaction monitoring mode (MRM), and conducting quantification by an external standard method. The optimized acetonitrile-formic acid/ammonium formate buffer solution extraction system not only can efficiently extract different forms of TMT, but also can well disperse different matrix samples, and overcomes the problem that the wheat flour improver is easy to gelatinize in extraction. The method is simple, convenient, efficient, good in accuracy, high in interference resistance and suitable for accurate qualitative and quantitative analysis of the total amount of the trace non-edible substance TMT in the wheat flour and the treating agent of the wheat flour.
