The invention provides a cutterhead mud cake detection method, which comprises the following steps of: establishing a normal data table and a fault data table in a cutter database, and acquiring the temperature of each cutter by using a temperature sensor; according to the measured temperature, predicting the temperature of each point, not provided with the temperature sensor, on the cutterhead, and generating a cutterhead thermodynamic diagram; judging data in the cutter database, if the data is less, calculating a temperature difference value of the cutter, and when the temperature difference value exceeds a preset threshold value, determining that the cutter forms a mud cake, and storing the temperature information of the cutter in a fault data table; otherwise, constructing a convolutional neural network, and training the convolutional neural network by using the data in the fault data table and the normal data table to obtain a convolutional neural network model; and performing image recognition on the cutter head thermodynamic diagram by utilizing a convolutional neural network model, judging whether mud cakes are formed on the cutter head or not, and positioning a specific cutter which is subjected to mud cakes by utilizing a temperature difference method.
