Problems solved by technology

Second, all prior art methods suffer from the problem of retaining liquid within the food product after processing because the products are stacked on top of each other, causing liquid to be forced out of the product in the underlying layer
Third, all prior art methods suffer from poor quality of the final product due to impurities in the injected product

Embodiment Construction

[0057] The invention discloses a device and system for processing food. It is obvious that the embodiments of the invention described hereinafter can be varied in many ways. Such modifications are not to be regarded as a departure from the spirit and scope of the invention, and all such modifications apparent to those skilled in the art are intended to be included within the scope of the following claims. The present invention will be described in detail with reference to the accompanying drawings.

[0058] figure 1 A top view of a processing line for processing food is shown. For clarity, the examples described and the selected scenarios are chosen from the fish processing industry. The feeding device 1 may be a conveyor device to which the fish to be processed arrives. The fish may be at any feasible stage of processing, ie whole fish, fillets, etc. Instead of infeed conveyors, simple buckets can be used as infeed boxes. The disclosed apparatus has an endless belt 2 mo...

Abstract

The present invention discloses an apparatus for injecting liquid into food objects, the apparatus is comprised of a frame, an endless belt, and means for propelling the endless belt to convey the food objects. One or more needle with a passage for penetrating said food objects, a needle holder for holding said one or more needle, and a blending means for blending together substances to create the liquid. A supply means for supplying the liquid to the needles, a means for moving the needle holder, wherein the needles injects the liquid into the food objects while communicating with the food objects, an. Control means, wherein the control means controls the blending means for blending together plurality of substances to create the liquid based on predetermined recipes selected by the control means in response to an input from operator as well as the injection process.

Description

technical field [0001] The invention relates to a device used in the food industry for injecting liquids into food objects. Background technique [0002] EP0297592B1 discloses an apparatus for injecting brine, marinade or another liquid into a piece of food through sets of hollow needles which are inserted into parts of the food piece. Depending on the estimated liquid absorption characteristics of the portions of the food mass, different amounts of liquid are injected through the needle set in order to obtain a substantially uniform saline or liquid distribution in the food mass. Pressurized liquid may be supplied to each needle set from a common source through a liquid valve, and the amount of liquid injected into each portion of the food block may then be controlled by adjusting the valve to control the pressure of the liquid supplied to said needle set. This adjustment can be controlled by electronic control equipment including a microprocessor. [0003] EP1402783B1 di...
