The invention discloses an exhaust device of a fermentation tank, comprising a receiving barrel, wherein one end of the receiving barrel is communicated with a main exhaust pipe; a pipeline of the main exhaust pipe is partially positioned in the receiving barrel; the gas inlet end of the main exhaust pipe is provided with a gas inlet switch valve; the other end of the receiving barrel is communicated with an exhaust elbow; the exhaust end of the exhaust elbow is provided with an exhaust switch valve; one end part of the receiving barrel, which is connected with the main exhaust pipe, is provided with a water discharge pipe; and the water discharge end of the water discharge pipe is provided with a water discharge switch valve. Fermentation liquor and water, carried by a gas exhausted in a biological fermentation process are respectively splashed into the receiving barrel through the main exhaust pipe and discharged from the exhaust elbow and the water discharge pipe so as to be prevented from splashing into the fermentation tank and the periphery thereof, therefore the requirements for cleanness and environmental protection are met.
