The invention discloses a small river crab belly meat dry-freezing and suction method, which comprises the following steps of: 1) raw material treatment: selecting small river crabs with weight being less than 80g and conducting raw material acceptance inspection such as sensory and visual inspection; 2) pretreatment: decomposing the crabs and separating crab legs from crab belly meat; and decomposing the crab belly meat and splitting the side surface of the crab belly meat into two parts; 3) air-drying; 4) treatment in a cold storage house: adding a quick freezing dryer in the cold storage house, controlling the temperature of the cold storage house to be approximate 35 DEG C below zero and putting the crab belly meat in the cold storage house for quick freezing; 5) dry-freezing: putting the crab belly meat in the cold storage house for dry-freezing for 3 hours, wherein the volume of the dry-frozen crab belly meat is one-fifth smaller than the volume of the crab belly meat before dry-freezing and crab shells are basically separated from meat to an optimum extent; 6) suction: using a vacuum press to suck and separate the dry-frozen shells and meat; and 7) packaging.
