The invention also provides a preparation method of the cinnamon extract. Researches show that the cinnamon extract is capable of activating an Nrf2 signal path, promoting anti-oxidation and expression of II phase detoxifying enzymes, increasing the intracellular glutathione level, enhancing the intracellular reduction capability and inhibiting the cytotoxicity caused by cancerogen arsenic and reactive oxygen H2O2.
