The nitrite scavenging agent has higher scavenging capability on nitrite and can be further developed to reduce the cancer morbidity of people smoking for a long time (smoking promotes a cancerogenic substance, namely tobacco specific N-nitrite, to be secreted into a bile duct) or other crowds having high nitrite intake, and as a food, a health-care food or a medicament aiming at nitrite poisoning; and the nitrite scavenging capability is far beyond that of vitamin C.
