Abstract

The invention discloses a processing method of black Chinese wolfberry fruits. The processing method of the black Chinese wolfberry fruits comprises the following steps: preparing an alcohol solution of which the concentration is higher than 70% (v/v) and the temperature is 18-25 DEG C, and utilizing the alcohol solution as a washing solution; washing the black Chinese wolfberry fruits in the washing solution, wherein the washing time is 0.5-60 minutes; drying the washed black Chinese wolfberry fruits until no moisture is on surfaces of the black Chinese wolfberry fruits; and heating the processed black Chinese wolfberry fruits by microwave. The processing method of the black Chinese wolfberry fruits disclosed by the invention is highly effective and simple, and is capable of obviously reducing total numbers of colonies of the black Chinese wolfberry fruits, so that the processing method has good sterilizing effects; moreover, the processing method is also capable of greatly reducing anthocyanin losses during the washing processes of the black Chinese wolfberry fruits. The black Chinese wolfberry fruits processed by the processing method have the following advantages: the total numbers of colonies are smaller or equal to 1.5 plus 102 (CFU/g), the anthocyanin loss rates are kept under 5%, and the oxygen radical absorbance capacities are 400-700 micromoles TE/gram; and the prepared black Chinese wolfberry fruits are fresh and bright in color and luster, safe and reliable to human body, green and environment-friendly.
