Abstract

The total content of fatty acids and salts thereof in the purified chitin is no more than 0.2wt.% in terms of fatty acids. Purified chitin is produced by washing chitin with at least one solvent selected from organic solvents and aqueous organic solvents so that the total content of fatty acids and their salts is reduced to at least 0.2 wt.% in terms of fatty acids.
