Abstract

The embodiment of the invention relates to a food additive, and provides a process for manufacturing IOTA carrageenan which is manufactured by using Eucheuma spinosum as a raw material. The process comprises the following steps of: immersing the Eucheuma spinosum with alkali after the Eucheuma spinosum is washed and dried; cleaning and draining the Eucheuma spinosum which is subject to alkali immersion; heating, well cooking and pulping the drained Eucheuma spinosum to dissolve out coarse glue; filter-pressing and cooling the coarse glue to form gel; freezing the gel; unfreezing the frozen gel, and dehydrating the unfrozen gel with a centrifuge; and drying the dehydrated gel to produce the IOTA carrageenan, thereby reducing the manufacturing cost.
