The data acquisition system at least comprises a data acquisition card, a sampling parameter control unit and a data analyzing unit, wherein the data acquisition card can be used for performing multi-channel data acquisition; the sampling parameter control unit is connected with the data acquisition card and is used for controlling the sampling parameter of the data acquisition card; the data analyzing unit is connected with the data acquisition card, and is used for performing predetermined analysis on multi-channel data synchronously acquired by the data acquisition card. By adopting the data acquisition system and the data acquisition method provided by the invention, data acquisition can be performed at a plurality of sampling rates. Moreover, sampling is stopped automatically when the quantity of sampling points is sufficient, so that sampling data volume can be reduced effectively.
