The assessment instrument is connected with the emission antenna and the reception antenna; the assessment instrument comprises a signal input terminal, the assessment instrument receives a material type selection signal through the signal input terminal and determines and outputs a microwave signal corresponding the material type selection signal, the emission antenna receives the microwave signal and the microwave signal is emitted to a measured material, the assessment instrument receives the microwave signal through the reception antenna, the microwave signal passes through the measured material to form an echo signal, and the echo signal is transmitted to the assessment instrument; and the assessment instrument can obtain the moisture detection result according to the material type selection signal and the echo signal. The multi-spectral microwave moisture instrument can pre-store the information of different calibration models corresponding to the various different materials, moisture content of different type materials can be measured by using the multi-spectral microwave moisture instrument, and the diversity and practicality of the multi-spectral microwave moisture instrument are increased.
