Abstract

The invention discloses a mid-infrared spectrum detection method for the quality of whole meal flour. The method comprises the following steps: collecting whole meal flour and wheat flour at home andabroad; determining the ash content in all samples according national standard methods; collecting mid-infrared spectrum data in a training sample set; pre-processing a spectrum; establishing a modelby obtained pre-processed spectrum data according to stoichiometry software; identifying a testing sample set in the model; comparing each predicated value of the ash content in the testing sample setwith a known real value to obtain predicated performance parameters of the model. According to the mid-infrared spectrum detection method for the quality of the whole meal flour, disclosed by the invention, the quality of the whole meal flour is identified; the mid-infrared spectrum detection method is simple to operate and can be used for rapidly and accurately evaluating the quality of the whole meal flour.
