The cake roll-cutting and forming mechanism comprises a rack 1 and a motor 2 which is arranged at the bottom of the rack and provided with a driving sprocket (1a), wherein two rubber rollers (2, 3) are arranged on the rack 1 in parallel, a transmission shaft (4) is arranged on the rack 1, the transmission shaft (4) is provided with a gear (4a) and a driven sprocket (4b) linked with the driving sprocket (1a) in a penetrating way, a wall of the rack is provided with two groups of adjusting grooves (1a) which correspond to each other front and back, adjusting sliding blocks (5) are respectively embedded in the four adjusting grooves (1a), the bottoms of the adjusting sliding blocks (5) are supported at the bottom of the adjusting grooves (1a) by springs (6), roll-cutting mould rollers (7, 8) are installed in inner holes of the corresponding adjusting sliding blocks respectively, and the two roll-cutting mould rollers are provided with gears (7a, 8a).
