Abstract

The invention provides a method for assessing food allergenicity by using monoclonal antibodies to allergen epitopes. The method comprises the following steps: (1) acquiring an allergen protein antibody and monoclonal antibodies respectively directed at allergen epitopes by using a conventional method; (2) coating an enzyme label plate with the allergen protein antibody, adding a to-be-detected sample after enclosing, then adding the monoclonal antibodies respectively directed at the allergen epitopes and measuring the quantities of the allergen epitopes; (3) calculating allergenicity intensity; and (4) treating a food / protein sample originated from a source similar to that of the to-be-detected sample and having acknowledged allergenicity at same conditions so as to obtain reference and comparing the reference with a contrast sample so as to determine allergenicity of the to-be-detected sample. According to the invention, the method assesses allergenicity of food / protein through preparation of allergen protein, is rid of dependence on serum of a patient with allergy and benefits standardization of assessment.
