Abstract

The method comprises the following steps: (1) weighing a degreased sample, feeding water and dissolving the sample; preheating the sample in a water bath kettle, putting into a constant temperature magnetic stirrer, vibrating to enable protein to be dissolved in the sample solution, centrifuging for 20 minutes at the speed of 4000 revolutions/minute, and collecting supernatant liquor which is albumin; (2) taking the residue extracted by water, feeding a 6% sodium chloride solution, fully dissolving, and collecting supernatant liquor according to the same method, wherein the supernatant liquor is globulin; (3) feeding the residue into a 70% ethanol solution, dissolving, and collecting supernatant liquor which is alcohol soluble protein; (4) feeding 0.4% sodium hydroxide into the rest precipitate, fully dissolving, and preparing glutelin by the same method.
