The optical fiber sensor comprises an optical fiber sensing probe, a reflecting mirror, a first supporting arm and a second supporting arm; the first supporting arm and the second supporting arm are fixedly connected to a transmission shaft; a through hole is formed in the first supporting arm, and the optical fiber sensing probe penetrates through the first supporting arm via the through hole; the reflecting mirror is attached to the second supporting arm, the reflecting mirror is right opposite to the optical fiber sensing probe, and the optical fiber sensing probe and the reflecting mirror form an F-P cavity; the demodulator is used for acquiring the cavity length of the F-P cavity in real time; and the calculation module is used for calculating the torque of the transmission shaft according to the cavity length of the F-P cavity.
