Abstract

The invention provides a large-scale production method for preparing edible fungi strains. The method comprises the following steps of: (1) controlling the environment, (2) managing raw materials and auxiliary materials, (3) preparing and standardizing a culture medium, (4) incubating, and (5) cultivating the edible fungi strains, wherein a workshop environment is required to meet a germ-free operation standard; the species and the specifications of the raw materials and the auxiliary materials meet corresponding standard requirements, and a first-in and first-out rule is adopted; the culture medium is not used until high-temperature and high-pressure sterilization is executed; the whole incubating process is realized by adopting germ-free operation; aged mycelia on the surface of the fungi strains need to be removed; after incubation is executed, the fungi strains are arranged in a culture chamber grade by grade according to different classifications; and the culture chamber is kept in constant temperature at the relative air humidity of 50-60 percent without any light. The large-scale prepared edible fungi strains are high in growth stability and consistent in growth condition; and the large-scale production method is used for culturing the edible fungi strains, so that production is conveniently subjected to uniform control.
