The method includes dissolving a to-be-detected amino acid substrate by a phosphate buffer solution to obtain a to-be-detected amino acid substrate solution, adding a bacterial suspension containing to-be-detected spoilage bacteria into the to-be-detected amino acid substrate solution to serve as an evaluation group, adding the bacterial suspension containing the to-be-detected spoilage bacteria into the phosphate buffer solution to serve as a control group, adding sterile saline into the to-be-detected amino acid substrate solution to serve as a blank group, cultivating and extracting the evaluation group, the control group and the blank group under same conditions respectively, performing detection to obtain biogenic amine concentration C evaluation, C control and C blank, and performing calculation to obtain the decarboxylation ability of the spoilage bacteria to corresponding to-be-detected amino acids. The method can be widely applied to detection of the amino acid decarboxylation ability of various spoilage bacteria in a variety of fish, and is applicable to quantitative detection and evaluation of the decarboxylation ability of the spoilage bacteria to various specific amino acids and to evaluation of the biogenic amine generation ability of the fish spoilagebacteria.
