The system comprises the modules of an acquiring and controllingunit, a communication transmission unit, a data service center, etc. The acquiring and controlling unit comprises a water quality acquiring node, a video monitoring unit, a controller and field equipment. The communication transmission unit utilizes an NB-IoT and ZigBee combined communication mode. The data service center comprises a database server, a communication server and an application server. The monitoring method comprises the steps of 1, setting a water quality parameter standard value according to a culturing animal; 2, performing real-time acquisition of the water quality data by the controller, and eliminating suspicious data by means of a multi-sensor fusion method; 3, uploading the data to the data service center according to a preset data frame format; 4, controlling the field equipment by the controller by means of a threshold; and 5, adjusting the field equipment according to an artificial intelligence algorithm, and realizing intelligent culturing monitoring.
