The method comprises the following steps: taking Eriocheir sinensis in different mature periods as samples, acquiring spectral data of crab meat, hepatopancreas, female crab gonad and male crab gonad ROI of the samples by utilizing a spectral data acquisition system based on the smart phone, and measuring the contents of characteristic chemical substances of the samples; carrying out SG smooth filtering preprocessing on the spectral data; according to the maturity of the samples, combining with the characteristic chemical substance content of crab meat, hepatopancreas, female crab gonad and male crab sex to formulate the grading index of the internal eating quality of the Eriocheir sinensis; enabling the preprocessed spectral data to be in one-to-one correspondence with the characteristic chemical substance content data, and obtaining the characteristic wavelength corresponding to each part of the sample through an algorithm; constructing a prediction model according to the characteristic wavelength data and the edible quality grading indexes.
