antioxidant vacuum rolling and kneading, and the quality of the conditioned meat product is improved. Gradient ultrahigh pressure destroys microbial structures in stages,
citric acid and a D-
ribose buffer solution block damaged thalli from repairing, a composite packaging bag is lined with a hygroscopic film and filled with high-
oxygen mixed gas to maintain meat color and adsorb condensate water, and finally, the composite packaging bag is deeply frozen to form a
microcrystalline structure and then transferred to an ice-temperature environment for storage. The method realizes
microbial safety control under the condition of no chemical
preservative, effectively maintains the
cell integrity of meat products, reduces juice loss and
fat oxidation, prolongs the
shelf life and maintains the eating quality.
