Abstract

The invention relates to a method for preparing resistant dextrin by using microwaves. The method comprises the steps as follows: (1) adding an acid solution to dry starch powder, and uniformly stirring the mixture to prepare a starch acid treated sample; (2) treating the starch acid treated sample in a microwave device to prepare a resistant dextrin crude product; and (3) dissolving the resistantdextrin crude product in water, carrying out enzymolysis by alpha-high-temperature-resistant amylase and complex glucoamylase, and then, performing decolorization, centrifugation, nanofiltration andspray drying to prepare the resistant dextrin. The resistant dextrin is prepared by the microwave method, the problem that products pretreated by a traditional acid heat method are not uniformly heated is solved, and the product quality is improved. Meanwhile, a particle carbon pile decolorization method is adopted in a resistant dextrin decolorization process, and the defects that powdery activated carbon is disposable, materials remaining in waste carbon after decolorization cannot be recovered, the material loss is larger, the yield is reduced, the labor intensity is high and the like are overcome. The decolorization method can reduce energy consumption in the production process, so that the production cost is saved.

Description

technical field [0001] The invention relates to a method for preparing resistant dextrin by utilizing microwaves, and belongs to the technical field of starch deep processing. Background technique [0002] Resistant dextrin, also known as indigestible dextrin or resistant maltodextrin, is an important product of starch deep processing. It is a low-calorie dextran and belongs to low-molecular soluble dietary fiber. Dietary fiber is called necessary for human health. The seventh largest nutrient is an important auxiliary material in the modern food industry. Compared with other dietary fiber products, resistant dextrin has excellent properties such as good acidity, heat stability, high digestive tolerance, low glycemic index, low insulin index, low calorie and prevention of dental caries. [0003] The existing production process generally adopts various starches in the presence of hydrochloric acid, heats and decomposes at high temperature to become pyrodextrin, and pyrodextr...
